A really easy meal that is sure to please everyone.
Ingredients:
(4) Tablespoons of Olive Oil
(2) Chicken Breasts
(2) Eggs
(2) Cups of Bread Crumbs
(1) Cup of Parmesan Cheese
(2) Teaspoons of Italian Seasoning
(2) Teaspoons of Salt
(2) Teaspoons of Black Pepper
(2) Cups of Marinara Sauce
(3) Cups of Shredded Mozzarella
(4) Tablespoons of Parsley
Gallon Sized Zip Top Bag
Paper Towels
Foil
Baking Sheet
Instructions:
Line a baking sheet with foil, brush foil with olive oil. Adjust the oven rack so that is in the second from the top space.
Pre-Heat oven to 400 degrees Fahrenheit
Cut chicken breast; cut through the middle of the chicken (butterfly)
Place chicken in a bag on a single layer, pound chicken thickness (use meat pounder or rolling pan)
Remove from bag, pat chicken dry with a paper towel
Season chicken with salt & pepper
In a small bowl mix; bread crumbs, parmesan cheese, salt, pepper, and Italian seasoning
Whisk (1) egg
Place chicken into egg
Place chicken in a small bowl mix, fully coat
Place chicken breast on the baking sheet; repeat steps 8-10 with all pieces
Place the baking sheet into the oven on the second rack from the top.
Bake for 15 minutes
Flip chicken, pour 1/4 cup of marinara sauce over each piece of chicken, and top with cheese.
Return to oven, turn on the broiler for 5 minutes
We love to add some steamed asparagus and/or even a side salad.
